What are some great places/entertainment for a young adult couple traveling to Disney for the first time together? We love kids but we also want some time away just for grown ups too.

Paige, while Walt Disney World is certainly one of the best spots on the planet for anyone who has a bit of kid inside, opportunities for adult fun also abound.
Consider a little water fun. At Disney's Contemporary Resort Sammy Duvall's Watersports offers parasailing, personal watercraft, and boat rentals. Floating calmly and quietly a couple of hundred feet above the water or zipping about the Seven Seas Lagoon both offer an exciting experience with unique views of the Magic Kingdom.
Looking for a little nightlife? Hit Jellyrolls the piano bar at Disney's BoardWalk or the River Roost at Disney's Port Orleans Resort-Riverside. Yee haa Bob, the improv pianist at River Roost, is a delightful hoot. Also consider heading to Downtown Disney. Raglan Road, Paradiso 37, Bongos, and House of Blues all offer entertainment, food, and drinks.
Each park, except for the Magic Kingdom, has at least one unique lounge you might want to check out when you need a little break from attractions. La Cava del Tequila offers amazing margaritas and tequila flights in Epcot and the open air Dawa bar in Disney's Animal Kingdom has quite the collection of South African wines and African beers along with standard favorites. My favorite park lounge is the kitschy, 50's themed Tune-In Lounge located in the Prime Time Cafe at Disney's Hollywood Studios.
