Hi , Just booked our first trip to Disney World 3/28/09 to4/4. Kids just turned 11 and 8, very excited. Staying at the Port Orleans Riverside, park hopper all 8 days, dining plan. How will the crowds be? What shows are good? How should we manage our time?

You are in for the vacation of a lifetime! Let's get to your question;
Crowds: Unfortunately you are going at one of the more crowded times. But as long as you use features like the FASTPASS, Extra Magic Hours, and other resort guest features, you should not let that concern you about wether you will have a great time or not. You will!
Shows: There are so many good ones that it would be impossible to list them all here. But based on your group, here are just a few "Must Do!" show suggestions;
Magic Kingdom: SpectroMagic Parade
and Wishes Nighttime Spectacular
Hollywood Studios: Lights, Motor, Action! Extreme Stunt Show
Animal Kingdom: Festival of the Lion King
and Finding Nemo-The Musical
If you want some other attraction suggestions, feel free to e-mail me a follow-up question!
Planning: I would suggest you plan out what parks to visit on what day, and then what meals you plan on having, based on where you will be. For your family I would make sure to see all four theme parks on the first four days, and then you will have an idea of what parks to visit with your remaining days, based on what you enjoyed most, and which have attractions yet to see!
Have a magical vacation!
