We are staying offsite and will have a rental car but have friends that are staying at a Disney resort. Can we park at their resort and ride on the Disney shuttles with them?

How exciting that you are getting to experience Walt Disney World with friends. Traveling with a group just multiplies the special memories together!
Unfortunately, non-resort guests are not allowed to park at the resorts as their "theme park parking". If you were going to park for a dining reservation, it is allowed on a very limited basis. Many resorts will give you a 3-hour parking pass and many will ask for the advanced dining reservation number to confirm.
My suggestion would be to have a designated meeting spot within the parks once you arrive. Often times, trying to meet up at the gates can be tough because there are so many people. When choosing this meeting spot, don't pick a huge landmark like Cinderella's Castle or Spaceship Earth as there are so many people to try to look among. In turn, choose someplace like in front of Casey's Corner on Main Street or in front of the gas pump just inside to the right from the entrance to Disney's Hollywood Studios.
