I am interested in experiencing an Adventures by Disney tour in Europe. My children are 15 and 18. My concern is that they may be included in child activities geared to much younger children. How are teenagers engaged/entertained?

I have been on six AbD trips with my family (with a 7th booked for late 2014). Our most recent trip was to China, during which my children were 14 and 17. There's really no way to predict in advance the number or ages of other children that will be on your trip, but in my experience there are generally a range of ages represented. On all but one of my trips there were several teens.
One of the very best parts of an AbD trip is the guides. These folks are trained in Disney service and are also adept at recognizing and accommodating the needs of each individual guest, including teens and young adults. For example, during our China trip there were half a dozen 12-15 year old kids. The group dynamic that evolved organically was that this group of younger teens ended up sitting together at many dinners and riding together during bus tours. They just loved hanging out as a group. My 17 year old daughter and a 19 year old boy felt more comfortable sitting with the adults at dinner and they were welcome to do so. During an AbD trip to Germany a year earlier, there was a 17 year old boy in the group. He, with his parents' permission, was able to participate in the beer tasting seminars. Guests are treated in the manner that's appropriate for their needs and circumstances.
On most trips, the kids under age 12 may be placed together in a few kid-centric activities, but guests ages 12 and up find themselves in a much more flexible zone, able to participate in a varied range of activities based on their interest, maturity, and the group dynamic. I have no concerns at all that your teens would be treated in a completely age sensitive manner.
I have been to Walt Disney World more times than I can count, but my absolute favorite part of the Disney company is AbD.
