Are there topiaries in every park? Are specialized tours by the gardeners whose dream job this is to grow them? We arrive in June a family of 4 with kids ages 8 and 6.

I believe you are referencing the elaborate topiary displays at the annual Epcot International Flower and Garden Festival
which runs through May 19 of this year. The horticulture experts at Disney are masters of their craft, and the displays are like nothing you've seen before. If you love to garden, you may want to consider visiting next year! Check out the Disney Parks Blog which highlights some past Behind the Scenes of Epcot's International Flower & Garden Festival.
As a gardening enthusiast, you will enjoy "how to's" featured here. There is a fabulous tour held only during the Festival called Gardens of the World.
Again, this is something you may want to plan your next trip around if gardening and horticulture are big interests for you.
With regard to your June trip this year, know that the landscaping and floral displays at each of the parks at Walt Disney World are pristine and simply amazing. Gardeners work year round to create breathtaking displays. You won't be disappointed!
