First trip with 5yr girl-loves princesses- & 3yr boy-loves Goofy, Donald & dinosaurs-, what are top 5 @ each park & downtown to see/do for each child? What time do the world showcases open @ Epcot? Can you still wake up Tinker Bell @ MK? Thanks

The World Showcase typically opens at 11 am. But from the Walt Disney World website main page you can check the park hours by highlighting "Parks & Tickets
", then selecting "More Park Hours
" from the pop up menu. At that new page you can select the date in question and the hours will show up.
Waking up at Tinker Bell at the Magic Kingdom is no more. Sorry!
As for the top 5 for your kids, I would start with;
it's a small world
Enchanted Tales with Belle
Main Street Electrical Parade (or day parade, if the time is too late for them)
Buzz Lightyear's Space Ranger Spin
Dumbo the Flying Elephant
The Seas with Nemo & Friends
Turtle Talk with Crush
KidCot Fun Stops
Agent P's World Showcase Adventure
Disney Junior - Live on Stage
Toy Story Midway Mania
Beauty and the Beast - Live on Stage
Voyage of the Little Mermaid
Festival of the Lion King
Finding Nemo - The Musical
Flights of Wonder
I could add more to any of these lists, but for the Magic Kingdom I could add hundreds. Make sure you are spending more time at that park than any other, as it is most ideally suited to a 5 and 3 year old. Plan to go to character meet-and-greets, and also consider where you want to dine, as those are great experiences too.
