You ask a wonderful question, one that I always confront when planning my next Disney vacation. I've vacationed at Disney World during the more crowded Holiday season and during less crowded times. There is no easy answer, so I'll run down some of the pros and cons of Holiday season to help you decide when may be the best time for your family to visit Disney World.
Traveling to Disney World during Christmas season is a truly magical experience. Disney goes all out during the Holidays and dresses up its parks and hotels in Holiday themes. Firework shows and park parades are also usually themed for the Holidays. Among other things, the Holidays at Disney World feature the Candlelight Processional, the story of Christmas accompanied by an orchestra and chorus, and Mickey's Very Merry Christmas Party, a special event on select nights at the Magic Kingdom that requires a separate ticket to attend. Another event my family does not miss is the Osborne Family Spectacle of Dancing Lights at Disney's Hollywood Studios. We also take tours of the unique gingerbread houses featured at a number of the hotels and restaurants around Disney World, including a breathtaking life-sized gingerbread house at the Grand Floridian Resort & Spa.
As you mentioned, the parks are typically more crowded in December, however, the parks usually stay open longer during more crowded seasons. Also, your accommodations are likely to be more expensive during Holiday season. In addition, Advance Dining Reservations at some favorite restaurants may be more difficult to get during the Holidays.
Since Holiday decorations are usually set up in advance of Christmas, you may want to consider combining the best of both worlds and plan your trip for early December, if possible, when the crowds may be lighter than during the actual Holidays. Whether you travel in September or December, your trip to Disney World is likely to be an experience your family will never forget.
